Natural process:

Most coffee processing entails harvesting coffee cherries from the tree/shrub, washing the cherries, pulping off the fruit, then fermenting the coffee seed, for a final washing of the coffee seed. This is called washed processing.


However, in natural processing, the coffee cherries are picked then laid out on raised beds to dry in the sun for a couple of days, allowing the fruit to over-ripen before finally pulping of that fruit. This develops into a sweet and very complex tasting coffee. Natural coffees has signature sweetness.


This Guji coffee is no exception. The intoxicating aroma of this coffee while being ground is evident of what lies within these beans. This coffee does best as a pourover filter coffee and can serve as a great espresso as well.
