The Swiss Water process of decafination is, in my opinion, one of the best methods for decafinating coffee, because there is no chemical used in the process. Most of the traditional methods for decafination utilize chemicals like methylene chloride, which have been deemed as having safe levels by the Food and Drug Administration. However, with the Swiss Water process, there is none chemical.
